We knew we couldn't retire from interning without one final puppet show, this is dedicated to Dietetics Faculty, we love/appreciate/adore/respect you:

Anne
1. Playing secret Santa at the Christmas party.
2. Assessing 15+ patients on each of my "staff relief" days.
3. Going to Apollo Burger after sitting in a cubicle without a lunch break for eight hours at the State Health Department when we didn't bring lunch because we couldn't bring ourselves to eat at "Grubbins".
4. Letting “someone” talk in my DM class... for a LONNNNNNG time.
5. Looking over the list of things we had to accomplish at UVRMC for the first time, and thinking "WOW, can I do all that?"
6. Spending time with the dietitian who my mother thinks highly of and therefore, was basically the reason I went into this field.
7. Teaching at the elderly site and having people tell me that eating certain foods, tomatoes, bread, etc causes arthritis, and the way to cure it is through shark cartilage supplements.
8. Having someone at WIC ask if Cheetos counted as an orange vegetable.
9. Performing lice checks on the kids at Headstart, and then giving the children stickers.
10. Thinking the junior girls were going to be bored on our "Day on Broadway" theme day.
11. Finding out we were going to do our taste test day without Sister Duncan.

Emily
1. Learning how to do DXA scans and begging people to let me practice on them
2. FNCE’s infamous/amazing/priceless/electrifying moment of capturing the “Past, Present, Future SDA/ADA” picture
3. FNCE: Eating with the Sisters at Cheesecake, “Sin Sunday” night, “Whip-It”, FNCE point system, sitting in the hotel hall with the girls, winning $100, walking around in the rain after FNCE, Miss FNCE pageant, watching Jessie Pavinlac dance to Black Eyed Peas.
4. My rotation with Heather Filipowicz – LOVED it.
5. PCMC’s pesto/mozzi/turkey sandwich every Tuesday
6. Sister Mitchell chewing me out for fork-mashing the communal desserts
7. Puppet shows. Learn, Do, Extrapolate. Mid-course evaluations.
8. Going through multiple packs of gum and having a mile-high stack of text books towering around me before my case studies
9. Opening up my case study Powerpoint in front of everyone and have everyone (including faculty) notice that my jump drive is named “E Kitty”
10. Mispronouncing words on purpose with Rebecca b/c we think we are so funny (and mature) “La-BOR-atory” and baked “zit-E”

Brianna
1. Listening to our 90th S song at least twice a day every day for four weeks
2. Running through the streets of Denver to make it back to the bus because all the interns were the last ones to get there.
3. Breaking all known records for sales of PenCourt Cold Plates on Theme Day!
4. Theme Day: A Day on Broadway. It was just an awesome day!
5. Having my first clinical note pass inspection of the RD at Primary’s without modification!
6. $4.00 lunches at Primary Childrens—I still miss those!
7. Nutrition Room Audits with Holly the Sanitation Hostetter. (“Who’s your charge nurse?!?”)
8. My case study on HLHS—it was a good one!
9. Friday class and field trips with all the interns—Always a good time!
10. Going through 130 eggs to perfect the Wickedly Wonderful Cream Puff!
11. Finding out that PenCourt makes no money in the Fall semester because they are feeding all of us interns!

Annie
1. Best. goal, ever. reached. Rebecca and Emily were present to win.
2. Falling off my chair three times in one day in Janelle's and my cubicle at the state health department
3. Trying to record the Dr. Fullmer-sound-alike-if-she-were-crude on my cell phone while giggling and pretending to walk by her cubicle naturally
4. "Having" to taste test the molten lava cakes... and then having to try them with the raspberry danish dessert... yummm
5. Selling the most desserts in (recent) pen court history!
6. Being a practice diabetic and whipping out my insulin pump when I needed to... especially in public...he he
7. While teaching a patient with heart disease some hearth healthy diet education, having him tell me that fruit smoothies were one of the fattiest things you could ever eat - even when it's made with just ice, fruit and yogurt. I didn't even know where to begin correcting that one :)
8. Having Dr. Nyland hand me the empty glass holder over the serving line in Pen Court for the twenty second time. Oh wait. I dreaded that...
9. Walking in a patient's room to give him and his wife a diabetic education, and walking out 30 minutes later full of advice about how to have a successful marriage
10. Receiving a $5 certificate + $2.25 dietary discount for lunch every day of our 2 weeks at LDS hospital... making it possible for me to get both lunch AND Nutty Guy's chocolate covered raisins!

Well... off we go to the real world. Hope we are ready because its TOO late now - the real world has BEGUN!

On Friday we said our goodbyes to Dr. Nyland, Sister Duncan, and Sister Mitchell (due to the fact they will not be present on our REAL last day). We all went to lunch at Gloria's Little Italy and reminisced about our glory days as interns. We are just finishing up our final week of rotations and have two case studies on Friday to wrap-up and obtain our verification forms. This too, has passed... almost.

State Health Department

Brianna and I were assigned to the State Health Department for 2 weeks and were involved with various projects. One of which was to prepare a webinar instructing employees about the New Food Policy... these are some action shots.

UDA!

The interns had the opportunity to attend the Utah Dietetic Association's Annual Conference this year. It was a great opportunity to meet new RDs, other dietetic students, and enjoy some great classes/snack breaks. The conference was in Ogden and so this required a very early departure for us... sacrifices bring forth the blessings right?! 3 of the 6 interns did win the random drawings (yes, ladies, on Friday I won some random restaurant tracking information... priceless, I know.) Brianna scored a beef basket that did include some steak knives among other treasures. Rebecca won something fabulous. It was also nice to see the Sisters Mitchell and Duncan and catch up with them.

Thursday was the BIG AWARDS ceremony where our very own, Anne Clawson Woodbury recieved UDA's Intern of the Year award. She is incredble and very deserving. Dr. Clawson came to the luncheon and experienced an extra special glimpse into the dietetic world. We are still designin/creating Anne's sash to wear to the rest of our Friday classes.

Friday was a fun day at UDA - I felt like there was an emphasis on public policy which was exciting. Friday was the exhibition day (it looked really small compared to the expo at FNCE).

Overall, we are all professionally enriched and can't wait for another year!

Pizza, pizza, pizza

Annie needed a ride home from her rotation on Thursday so Brianna and I went to pick her up after our rotation ended. We got there just in time for a pizza demo by a chef that had trained in Italy. The entire FNS department at LDS Hospital was invited to the demonstration and each of us got to make our own pizza! We made a wheat crust and used a spinach cream sauce. It was a blast and a great team building experience for the department. Please note Janelle's look of determination as she attempts to throw her dough.

Field Trips... do a body good.

This week we went on 2 field trips!

Tuesday:
On Tuesday we went with Sister McGuire to the Davis County School District central kitchen. It was AMAZING to see the massive equipment and unique production system that they have developed. They also fed us a fabulous lunch. Then we went to Huntsman Cancer and met with the outpatient dietitian that gave us a tour. The facility was incredibly classy and it was an interesting job to learn about. Finally we made our way to the U and heard from a research nutritionist. She was very informative about that career path and Annie may have found her niche.

Thursday:
Dr. Nyland and Sister Mitchell went with us to SYSCO to tour the facility and have lunch. Dick and Rob were nice enough to give us an in depth tour and answer all of our questions about the system they have. We were exposed to beef selection methods and are well prepared to purchase quality BEEF. We also consumed large quantities of fried Asian treats for lunch and followed that up with some tasty cheesecake bites. Our final stop was to the U to see their new kitchen, cafeteria, and patient service system. We were all highly impressed with the new facility and grateful for the tour.

Legislature Day

That episode of School House Rock came to live for all of the interns yesterday when we all went to UDA Legislative Day. We are now fully aware of how a bill becomes a law. We spent the morning speaking with members of the legislature and doing health screenings on them. Some of us went with the UDA lobbyist, Candice and her intern, Brock to speak with representatives. It was fun to speak with them about how we are trying to change our certification renewal process.... just paving the way to licensure :) There was an exciting energy at the Capitol building. We had great opportunities for networking with other dietitians and students. Special recognition goes to the one undergraduate that participated: Shannan Brooks.

Of course... we had to do lunch afterward:

Goal: Empathy and Awareness.

In the BYU Dietetic Internship, we have an assignment that is designed to help us develop empathy and awareness of the reality of intensive insulin therapy. In our undergraduate curriculum, we were required to count our carbohydrate exchanges and maintain the numbers in an appropriate range... what we are doing now has been taken to a all new level! For the next three days, we are wearing insulin pumps (using saline instead of insulin) and we are checking our blood glucose at least four times a day. We were given arbitrary numbers for our basal insulin to be set at and then we have to count our carbohydrates and give ourselves bolus insulin as needed throughout the day. We had fabulous guest Diabetes Educators (a RN and RD) come and teach us what we need to know for this experience! We all had to select sites for our pumps to be inserted and we are all becoming accustomed to pricking our own fingers. Wish us luck...

Birthday!!!!!!

The adventures continue... we had our first class on Friday and Anne was lucky enough to have her birthday on the same day so we all fronted some special birthday hats in her honor. All of us are doing our own rotations - Annie/Janelle are doing community with the health department and WIC, Anne is saving lives at McKay D, Rebecca is at IMC doing the same. Emily and Brianna are at Primary Childrens doing adminstrative projects. We are all pretty happy... life is good.

We have finished our first semester!

We had our Internship Christmas Party this weekend! Janelle and Adam were kind enough to host it at their house and we all met up for some appetizers, molten lava chocolate cake, white elephant, and sweet conversation. The poor men that attended had to hear all about internship things and they did a great job humoring the women in their lives.

The Other Interns

Since Emily is so good about blogging what they are up to, I figured someone needs to represent the other group of interns...and I guess that is me. Anne, Brianna, and I (Janelle) are just finishing up our Pen Court rotation. We had big shoes to fill after Emily, Rebecca, and Annie but I can definitely say that we have enjoyed pen court more than we ever thought. The highlight of course was our theme day: A Day on Broadway. We got our inspiration after we all saw Wicked in Denver and loved it!

Our menu for theme day included: teriyaki glazed salmon with wild rice, NY pizza with a Caesar salad and tuxedo dipped strawberry, white bean chili, cream puffs with a raspberry sauce, German chocolate cookies, and churros y chocolate. We loooooved our food but it was definitely a challenge getting to that point. We made cream puffs 4 times and went through over 100 eggs before we finally somewhat perfected the recipe.

When theme day finally came we were so excited but definitely not prepared for the craziness that was about to occur. People were lined up outside of Pen Court 1 hour before we opened! Once we started serving, girls were just running all over the kitchen to keep up with the crowd. Our "made-to-order" pizza was so much more popular than we thought it would be. We forcasted for 50 and actually sold 82! There is no way we could have ever survived without the other three interns there to help us. But at the end of the day we were so happy with how things turned out and treated ourselves to a soda with Sister Mitchell.

Pen Court is now closed for the semester and the three of us are just working on getting things ready for next semester. We definitely miss seeing the pen court students every day and really miss the lunches.

ServSafe!!!!

We went to become ServSafe certified. It was convenient that we had Laura (BYU dietetics ALUM) teach us... she managed to entertain us the entire time (which is difficult considering the topics were HACCP and temperature logs.) I considered it a business trip because I got to take the company car and they fed me several meals. It was fun... hopefully we passed the test.

Fridays ROCK

On Fridays, Annie, Rebecca and I teach the Nutrition Assessment lab to the Seniors. Today we went over how to take vital signs and so most of these picts are from the blood pressure practice period. After that, Rebecca and I teach a weight loss series and today Janelle taught about bone health. Afterward, we had to have intern lunch to obtain our needed omega 3s for the week. We are so heart healthy.

Back from the Dead - Thursdays are the BEST

At the end of Pendulum Court, the interns all voted on who grew the most and we feel like we all came to a pretty clear consensus:

We had to have a final puppet show today... it was unprecedented as per the fact we had ALL interns participating. If this whole RD thing doesn't work out for us, we may consider stage (or at least puppet stage).

Side Note: My camera has been broken the past few weeks and so there has been a dearth of pictures to represent what is happening in our exciting internship lives. Plus, taking pictures of Annie and Rebecca click buttons on the computer at the hospital is less interesting than it even sounds.

Today was a fabulous day... it was the FINAL day of Pendulum Court/Theme Day for Anne, Janelle, and Brianna. They did fabulously but I will let Janelle talk about it. I do feel as though I should mention that they sold almost a kajillion dollars worth of food today and broke some major records for the PC. 22 rolls. Can you believe that? Oh and on top of that, the total income was INCREDIBLE. The pizza was my favorite (especially the "grown up" version). They sold over 80 cold plates which is INSANE for us considering the most we ever sell is about 25 to 30. They did fabulously. The world was impressed; we were impressed.

Nut. Assessment Lab!

We have begun working in the Nutrition Assessment Lab. Today we taught about taking height and weights for infants, toddlers, kids, and adults. It was Halloween so we got to have a little fun trying to manipulate costumes. Just continued learning/doing/extrapolating. That's what we do.

Miss FNCE Pageant 2009

We had a 2009 Miss FNCE Pageant on the way home from Denver. I am sure that our bus driver LOVED every second of it! Natalie was our hostess and she ran the show. Each girl had to introduce herself and model a hairnet (a little more BYU appropriate than a swimming suit right?), answer a question from the audience, perform a talent, and finally they had to respond to the intern judge panel's questions about how they could make FNCE a better place or what they would do if they had one day with the ADA president. Some of the talents were HILARIOUS. We discovered some crazy and awesome things about BYU dietetics students!

This clearly was a successful pageant year.

FNCE, FNCE, We All Love FNCE!!!

We had an amazing trip to Denver, Colorado thanks to our bus driver, LeGrande and Le Bus Company. A day by day highlight:

Saturday: We met at 5:15 at the Law Library and finally left at 5:45. We had a Sandra Bullock theme on the bus and watched, "While You Were Sleeping," "Miss Congeniality," and "The Proposal." That was broken up by having our open mic sessions with predetermined conversation topics (i.e. worst dates, most embarrassing moments, etc). We finally arrived in Denver after 9 hours on the bus and suited up to head over to the opening ceremony at FNCE. We were excited to hear from the new ADA President, Jessie Pavlinac and watch her dance a little to Black Eyed Peas. Suze Orman instructed us for awhile on how we should be saving our money. Then... the night life started - we went to the Cheesecake Factory and we had already made some reservations for 50 people... well, someone HORRIBLY messed that one up and we ended up having to wait for awhile. It was fun because the Sisters Duncan and Mitchell came and we met up with some BYU alumni.

Sunday: We went to our first classes and it was many of the students first exposures to "THE EXPO" which is the professional description of adult trick-or-treating (ok... this probably isn't the purpose but we all found the silver lining). We ate at Woody's Pizza and then we went to an AMAZING and PERFECT fireside that Sisters Duncan and Mitchell presented to us.

Monday: We had more FNCE business to attend to. There was a fun speaker that helped us capture the vision of remarkable communication leading to remarkable results... Pamela somthing... More Expo time... more classes. We went back to the hotel and everyone went all over for dinner but most of us went to Dave and Buster's and either went to "Whip It" or played in the arcade. The big event was synchronized swimming... there is a video out there somewhere (hopefully not on youtube :)

Tuesday: Our final day at FNCE... more classes, more Expo... more networking... We had an awesome closing ceremony with Soledad O'Brien. We determined she is best described as classy and sassy. Some people headed back for an afternoon nap at the hotel before going to Wicked, others explored the streets of Denver and had dinner. Wicked was a hit and everyone made it home alive after using public transportation!

Wednesday: We woke up to find a faint snow on the ground and were on the road with LeGrande at the wheel by 6:30. We watched Bride Wars and Dan in Real Life and then... WE HAD Miss FNCE 2009. It was AWESOME!!! We had no idea how talented everyone was :) Special congratulations to Miss Senior FNCE: Michelle Christenson, Miss Junior FNCE: Bree Kidd, Miss Senior FNCE Runner-up: Gayle Larsen, and Miss Junior FNCE Runner-up: Morgan Garlock.

Then we were exhausted... and then we were home. We are all trying to figure out how we can make it to Boston next year!!!!!

This was our last week in our respective rotations. Now, we switch spots with the other groups... clinical and management here we come (respectively). We attended (or presented) at the clinical seminar yesterday and each of them did FABULOUSLY. Today we had the management presentation about our Pen Court experience. Now... we are feverishly prepping for FNCE! Let the games begin!

For some reason blogger was funky and wouldn't show me the pictures so that I could put captions on them...

1) Theme day was a SUCCESS. We feel like it went fabulously.
2) We broke Pen Court's dessert selling record... we ran out of all 85 that we had! Molten Lava Y Mountain Cake was AWESOME!
3) Special thanks to Sister Duncan because took care of all of the balloons for us... that was a lot of time and we appreciate it.
4) The Rational oven started going crazy and smoking that we thought theme day would end with a real bang when the smoke alarms went off... conveniently it relaxed itself.
5) The students did great in Preprep and day of service... things went smoothly.
6) Thanks to all of our friends and family that came to support... special thanks to Ann's UTE husband and brother-in-law...
7) One more day and we are done with our production time in Pendulum Court... goodbye, farewell, and amen.

The day started out with Janelle walking in and saying, "Something smells a little strange..." We all joked... Lunch rolled around and Sister Mitchell kept walking by the dining room thinking, "Someone has HORRIBLE gas... they need to leave..." and then FINALLY, we realized that the Eyring Science Center had some "issues" today:

Today we Management Thursday: We all team up with another intern so that they can discover what we actually do... I especially love this pict.

We can be super busy but we will never pass up an opportunity for a glamor shot.

Crazy Business...

So maybe we had a REALLY busy and dramatic week... we tried hard but lots of crazy things happened that left us EXHAUSTED, stressed, and laughing (out of hysteria?... not sure). But, we are definitely HAPPY. We only have 1 week left in our rotations (tear).

The Sisters are THE BEST and surprised us with an AMAZING breakfast today to boost our morale. Favorite conversation was: our plate is always full, its just always a different entree... only Pen Court Management would make life analogies like that.

(Sister Mitchell even brought us special glasses!)

Somethings should be celebrated... like grad school acceptance... Annie and Emily just signed up to be here for another couple of years! All are invited to our future hooding ceremonies. Dates TBA.

Somethings should be taught (through puppet shows).... Production meetings were getting a little monotonous and so it was decided that some special hairnetted visitors come and teach what the real purpose of Pendulum Court is.

Today was our theme day's taste panel. We had to test various recipes in order to determine what we will serve on our BIG DAY. My favorite thing to tell people as they were loading up on all of our good free food was, "Thanks for supporting science."
This is Dr. Parker, he is most assuredly considering how the CHO and PRO will all mesh with our bodies' metabolism. OK... probably not... but he was our all time favorite Biochem teacher.

This is Annie saving a tree. Long story short, she is the hero. She made our beautiful survey and organized it randomly for the participants to keep it appropriate.

Who knew how long it took to prep little portion cups with labels? Annie and Rebecca now do.

Post-bac. work

I apologize up front that we only have pictures of this set of interns... the other girls need to front their business and post something!

This morning we had class at 7:30 and this is all of us sitting and waiting patiently as we consider the exhaustion that will soon prevail with another dry run at Pendulum Court to manage.

On Tuesday, we went with Sister Duncan to the SYSCO cheese grotto and produce storage show. We each ate SO much cheese that it was absolutely disgusting but still was enjoyable!

The strangest cheeses we ate were probably:

1) an espresso lavender cheese

2) a red wine intertwined cheese that looked like it had red veins through it - VERY TASTY

3) some pungent and overpowering stinky cheese that destroyed our taste buds for the rest of the day.

We also met a lot of sales people that we found entertaining. We are now experts on brocollini and value added mixes. Another highlight was when a salesman discovered that Sister Duncan was our teacher and said, "Talk Teach!" and it threw her so off gaurd that she giggled hysterically and almost choked on her mint.

More Happenings...

The Pen Court interns have been working hard to prepare everything for opening soon. Annie has been especially busy hiring all of our employees and managing all of her other responsibilities... we think that it has gotten to her a little bit... it all came to a head when she went to open the door (we have a special coded door) and she entered the code accurately but somehow she did not turn the handle properly and we just heard a VERY LOUD THUD of her head hitting the door... she managed to open the door finally and literally CRAWLED back into the room. TGIF

Brianna is using her teaching methods background to prep for the lab she is teaching to the seniors next week... Emily can officially say she has donated her body to science now.

Other than that:

The internship rolls on... the interns doing their clinical rotation are in full swing at the hospital and each one has had interesting patient interactions thus far. The Pen Court interns are almost done orienting the undergrads to the Pen Court ways (you know: learning, doing, and extrapolating). Pen Court opens a week from Monday. We also get to represent the Pendulum Court at a Sysco cheese and fruit food show... I hope we can handle the enormous amount of free samples we will have to consume. The things we do to become educated. Wow.

It has been one week since we had our BYU Dietetic Internship Orientation and we are already in the full swing of the internship. It won't be long until we hit the big May 28th end-of-BYU DI-luncheon.

Brianna, Ann, and Janelle are beginning with their first clinical rotation at UVRMC and have been hitting the books hard as they prepare to be master clinicians. Each day they meet with Dr. Fullmer and hold dialogues about specific diseases and the related nutritional therapy. RIGOROUS. They are finishing up orientation at the hospital and get to begin working with the RDs soon!

Annie, Rebecca, and Emily are working in Pendulum Court for the first 8 weeks in the management rotation. They have been getting their bearings and preparing for their specific management roles. Rebecca is figuring out the inventory and forecasting for the opening week, Annie is hiring our utility employees (a lot of emails and interviews!), and Emily is busy making posters and planning cheers :)

We are all working on preparing lesson plans for some out-patient classes that we will be doing for BYU staff every Friday. This is a new addition to the internship and should be challenging and interesting. We are responsible for a 6 week weight loss course and some random additional classes - heart disease, diabetes, vegetarian, lacation/pregnancy, celiac, and family meals (I am probably missing some).

It is good to be back at BYU and with our faculty again!
